Brownies

Pfftt.. the title is too predictable...

I've been craving for something sweet & buying some ice creams / cakes would be to easy.. and not CHALLENGING at all.. heheh.. i decide to make my own brownies! hehe..

This recipe is not as easy as the cheesecake as you have to actually BAKE your brownies but it's still doable.. ehehe..










THE INGREDIENTS

Base:

150g digestive biscuits (I used Jacob's wheatmeal)
150 g walnuts
125g unsalted butter, melted

Crush the biscuits & walnuts. Stir the melted butter into the mix. Spread it into your cake dish and set your base!






Brownies:

125g dark chocolate broken into smaller pieces (I just used cadbury cause I never like cooking chocolate.. =b)
75g unsalted butter
400g caster sugar
3 eggs
1 tsp vanilla extract
150g flour
200g choc chips (i chose the black&white ones)

preheat the oven to 180 degrees celsius
melt chocolate gently (hot water bath --> if u were like me thinking that u need to add water & boil it *slaps forehead*, go and google 'hot water bath baking')
Mix butter & sugar. After beating the eggs, mix it with butter & sugar. Pour the melted chocolate & vanilla extract. Pour in the flour & half of the choc chips. Spoon your mix onto the biscuits mix & spread them. Sprinkle the remaining choc chips on top.

hehe..there was an incident. i do not know how to use the oven at home & i asked my maid to preheat it for me & long story short, there was a fire.. hehe.. we managed to catch it early on so only the top part was burnt and we scraped the burnt layer off.. luckily it turns out okay (at least according to my standards!) hehehe.


the smallest piece ever cause i'm supposed to be on a diet!!!

oohhh.. two weeks ago i made chicken parmigiana.. sounds so fancy but so easy.. hehehe..

what do i miss the most?

sometimes, whenever i'm not doing anything, i like to think of the past. i know living in the past is not a good thing but i like reminiscing on good memories.

this would be one of the boring things that i miss about NZ / uni experience. what i miss the most about 'dating' while mark & i were still students were times when we celebrate our little achievements.

i work better when there's REWARDS / INCENTIVES compared to INTRINSIC MOTIVATION. he knows me so well that whenever he needs me to complete my assignment earlier so that he can refer to it as a 'guide'. i'd usually finish my assignment at least one day prior to the dateline as it'd only take him one whole night to understand the task and complete it. *cough* another similarity with FINA.. hehe..

i never attend classes on days after working SO HARD or during SPECIAL DAYS like raya etc. that's y i hate local unis. abroad, it's okay to attend only half of the lecture without having people to stare at you and the lecturers always upload their notes online! both of us would be too lazy to submit the assignment and usually i'd be the one climbing through the hills to get to the uni to submit our assignments.. sometimes i'd even singgah nab&myto's to submit their assignments as well... just because i never take afternoon naps and i don't sleep late... hehe...

after that i'd usually be glued on my laptop to catch up on my TV series. when mark would wake up he'd bring me to celebrate our achievement my bringing me for late lunch cum dinner and if it's not to late he would allow me to enter as many stores as i want on queen street.. (FYI, he always wants me to PLAN my shopping!!! he needs to understand that i would only realise the things that I NEED when I'm in the shopping mall / street).. hehe...

oh and if it's to late, he'd bring me to FOODTOWN as I love to go through the products and read magazines there..

what can i say?

I AM EASILY PLEASED!

Cheesecake In A Glass


Because of the Big Bad Wolf book sale, I have bought a lot of recipe books.. I thought that this Cheesecake In A Glass recipe is very simple & doable for a lazy person like me.. =b But instead of using fancy martini glasses like nigella, I just used ramekins..


the recipe that i managed to find online... hehe.. but i didn't do any measuring as i'm too lazy to do so..


my chopped strawberries... hehe.. it doesn't look so pretty..



my shortbread biscuits... i simply used my own fingers to crush them =b



distributed the crumbs equally into each ramekin...



the mixture of cream cheese, whipped cream, lemon juice, vanilla extract & icing sugar...



distributed the cream cheese equally...


and finally top it with the chopped strawberries!!

i'm so doing it in a glass next time.. but it's so so so simple and delicious!!!

I've just watched the first part of gossip girl season. omg. i have to admit. it's a bit boring. as there's no more CHAIR (chuck+blair). however the end of of episode 6 is just oh so romantic!!
